Nona’s Land Air and Sea Gumbo.. I call it cleaning out dat fridge ..
This now ain’t no cheat recipe but just what did for this pot…

1/2c flour.
1/2c butter.
2 onion diced .
3 poblano diced .
3 celery stalks diced.
1 bulb garlic minced.
2 Left over chicken breast shredded.
1/2 lb of shrimp from a boil .
1lb of crab meat caught at grand isle from a boil.
2 links smoked pork sausage links from a boil quartered.
1/2 link Smoked andouille quartered.
1/2 bag frozen okra .
12c of chicken stock .
1 tbs Nonas surly hot sauce Manganero .
Couple a few of Cajun season .
Tbs or so Worcestershire .
2 can Faubourg blacked voodoo .
Splash of kitchen bouquet .
Couple Bay leaf .
Some fresh fresh filé .
S&P.

I may have missed something but I think that’s about all y’all need really …

Time to roux it up baby !!
Getcha a pot.
Med low heat turnt on .
Melt that butter real good .
Add in ya flour .
Stir .
Stir .
Stir .
Stir .
Okay you gonna do this here for a long time hour or two.
Until nice and chocolate .
Whole house be smell’n good now .

Toss in ya sausages and let ‘em fry up in that roux ( now what you can do is let those sausages fry up in the pot first and getcha a little extra fat but you may have to adjust that flour ) .
Then add ya onions and celery .
Let that fry up in the roux .
until nice and soft .
Add that garlic and peppers .
Let that fry up nice till soft
Now let’s take a big ole sip of that beer ( you’ve earned it) add the rest to that pot
Let it cook down a little .
We don’t want that ethanol just the flavors.

Now open that second beer cause we’ll now you gunna want a beer .
Go ahead and add ya Cajun seasoning the
Worcestershire hot sauce and little bit of that filé now
and some salt and pepper .
Let it cook in a second.
Let’s go ahead and add in that stock .
Stir it up real good .
Now add the rest of everything but the crab meat and the rest of dat filé .

Now I think ya got it all in the pot ( if I’d forgot something go ahead and add it in now too)
Lord let it come up to a nice lil boil and then reduce that heat to a simmer
Let it cook down for hour or so.

Go ahead now and make ya some rice.

Once deduced down and about five minutes from it being in ya mouth add that filé and crab …
Getcha a bowl .
Load it up !
Toss a big ol spoonful of rice on top!
Add some more Nonas hot sauce
And boom you eatin happy as a bird in flight .
