Red Beans and Rice

1lb dried red beans (I like camellias )

1 onion diced

1 poblano or green bell diced

4 celery stalks diced

6-3 cloves garlic depending on size diced

6 cups water for beans

2 cups water for cooking

4 cups chicken broth

1 lb sausage smoked sliced and cut into quarter pieces

1/2 lb of Tasso or thick cut pork belly or bacon is fine too diced into 1/2 inch chunks

1 Tbs Cajun or creole seasoning (Tony’s or slam ya mamma is great)

1 teaspoon salt

3 bay leaves

2 Tbs fresh parsley

1 for cooking 1 for topping minced

1/2Tbs Nona’s surly sauce (pick your favorite and your heat for an extra kick!)

2tbs olive or avocado oil

2 medium to large pots if you only have one that’s okay too.

Once you have everything diced and measured out. Wash beans. Remove any, bad beans, dirt, rocks, etc. drain. Add 5 cups water and broth to pot

Heat at medium and add beans. Turn up to high and bring to a rolling boil. Uncovered. Boil for 10-15mins. Once timer goes off take off heat. Let sit for 25 mins. Heat large pot at medium heat, Add oil and meat sear for 10-15 min or until browned. Remove meats. Add veggies to pot and sauté for 20-25min (don’t let them burn ) just translucent and lightly browned pulling up any drippings from meats. Once done add Meats, Veggies, Beans and stock Water, All Seasonings. Bring to low boil and then turn down the heat to simmer cover and let go for 1.5-2hrs stir periodically making sure nothing is wanting to stick.

About halfway through cook you some rice. For perfect rice:

4 cups water

 2 cups white rice

 3 Tbs butter

 1.5 teaspoon salt

Add, water, butter, and salt to a pot. Bring to boil. Stir in rice. Keep stirring until it begins to boil again. Turn off heat remove the pot for a minute slow stir during that min so rice doesn’t stick. Bring back to hot eye. Stir a couple more times so that it doesn’t stick. Cover. Wait about two mins stir one more time. Cover. Let sit don’t touch it.

At this mark remove 1 cup or so of beans and mash. Return mash to pot . Do so until it’s creamy for your liking. Once done spoon some rice into a bowl

Ladle some red beans on that beautiful rice. Top with some parsley and a few dashes of Nona’s Surly Sauce.
